About 5 hours and light years away from Kinshasa, Jo was finally "in the bush". ..MAF Pilot Tom Howard took us in a Cessna 206 while Valli Howard manned the radios and e-mail back in Kinshasa. We flew over an immense jungle forest and followed the Congo River to where it splits and becomes the Oubangui River. We landed in the capitol city of Bangui (the name makes sense) for a wonderful stopover at the Mennonite Hostel.

here, .I went for a walk and was shown the pita factory with pitas fresh and hot out of the brick wood- fire oven, ten for a dollar!

Another treat is the vegetable vendor, who brings her smiles as well as her wares right to your door.
Manioc is a staple food grown for both its starchy root and its edible leaves. (Congo is called the manioc capitol of the world)
Here, the dried manioc chunks are being measured out and will be taken to be ground into flour. Afterwards, it will be cooked to form a doughy paste called foofoo. When we were in the air, we could see large areas of drying manioc looking like white lakes dotting the landscape.
The leaves are pounded in a tall wood mortar and cooked with dried fish for protein. Then the "pondu" is spooned over the mound of foofoo and is served with pili-pili, a fiery hot paste of red chilies. And speaking of food...

Take a look at this man-made hive, a basket woven to trick the bees into making honey. In Yaloke, you might have one in your backyard.to have a supply of fresh honey for your dessert.
